2022 Soups - a recap

I started off 2022 with a goal to make at least 22 different soups. I knew I'd only be making soups from January through April and then October through December so I made a lot early on. At about the 10th soup, Tim (my husband), confessed he didn't really like soup. WHAT???? how can you not like soup I thought. But, despite this news I continued on in my soup quest.

I actually made more than 22 soups. I made some soups twice, or even thrice. Some soups I'll definitely make again (hello Chili and Nana's Turkey Soup) while others I won't.

Only one soup on the list is one I'd never make again. It was not bad, just not a good recipe. I highly recommend you try them out. Soups are basically easy to make and if you are an ingredient household (which I am) you should have most ingredients on hand.

My rating of soups, with additional comments, follows:

#1 Broccoli Cheddar Soup (My favorite soup. I love cheese. I love broccoli.)

#2 Vegan Tomato Basil Soup (Inspired by my favorite soup at the Shakespeare Tavern in Atlanta)

#3 Chicken and Wild Rice Soup (I made this soup several times. I thought it was AMAZING)

#4 Polish Dill Pickle Soup (Sounds odd but it was delicious and I will definitely make this again)

#5 Beef Pho (I will make this style of soup again and again. Tim like pho)

#6 Cream of Vegetable Soup (Dolly Parton's Dixie Stampede Soup) (Dolly has this one right. Definitely a crowd pleaser)

#7 Scottish Lentil Soup - (Definitely will do this one again on St Andrews Day)

#8 One Pot Chickpea Curry (Excellent soup but there are so many others I love that this won't be at the top of my list)

#9 Mulligatawny (Soup Nazi Copycat recipe) (Loved it but won't make it again)

#10 Shrimp Ramen (A classic that will be made again and again)

#11 Dairy Free Butternut Squash Soup (Good but I probably won't make again)

#12 Vegan Chili (Good but I prefer the meat version)

#13 Cream of Mushroom (Better than store bought!)

#14 Cabbage Roll Soup (I made this twice it was soooo good!) (I will definitely make this again)

#15 Colleen’s White Chicken Chili (A great crowd soup and will take to pot lucks)

#16 Texas Chili (still Tim's favorite) (Because it is Tim's favorite I'll make this again)

#17 Tom Ka Gai (like it but not enough to make this recipe again)

#18 Vegan Corn Chowder (I prefer that full milk version)

#19 Clean out the Fridge Veggie Soup (I will definitely make some version of this again)

#20 Italian Sausage Soup (Probably won't make this again)

#21 Simple Lentil Soup (Definitely won't make this again)

2023 is the year of the Burger! Look out for some recipes!
