This recipe has several variations. I’m making the base recipe and will try one or two of the variations. The base soup ingredients were easy to source. I did make one addition - I added in vegetable broth base because the soup lacked layers of flavor when made with just water.

I have always like lentils. My kids like lentils. Tim does not like lentils so I'm expecting a poor review from him on this one.
The vegetables smelled so delicious! I love cooking with carrots, onions, and garlic.
The finished product was great. Definitely a 3 out of 5 on the 5 point scale with the basic recipe. Once I added in the vegetable base it moved up to 4.5 out of 5 for me. I plan on trying the Greek and Mexican variations for lunch this weekend. I'm sure I'll have a lot to use because while Tim will taste this, he most likely won't eat it.
